If enough of them are attacking you at once, some will be going for the eyes. I do kind of assume that rabid animals might have some instinct to even do that.

So either you have eye protection, or you blindly fight with 1 arm covering your eyes.

Would a hummingbird be able to lethally wound you by poking really deeply in your ear? Or would that just be very unpleasant.

Probably not lethal but with some REALLY amazing luck a hummingbird might be able to perfectly go into your ear and maybe rapture an eardrum or something. Apparently a hummingbirds beak can be anywhere from 0.8 to 12 cm long and the human ear canal is like 2.5.
If you just get teleported to throw hands with birds with whatever you have on you, you could probably just put a shirt over your head and be fine.
If you assume you get absolutely nothing you just cover eyes and ears and start hitting everything that comes too close
